Dear Ole Tyme Customers:

Some recent questions have come up about reddish-brown discoloration on the butt ends of iceberg, romaine, and leaf lettuces. This occurs naturally after harvest when the lettuce releases a milky sap called lactucarium (or latex) to heal the cut. As this sap oxidizes, the cut area darkens. While it may look concerning, this discoloration is purely cosmetic and poses no food safety risk. It's more noticeable during warmer months when lettuce grows faster but can occur year-round.
